i guess tri tip is a west coast thing.... learn something new everyday :thumb:
 I think we figured that out the first time I was out there, I remember saying "WTF are tri-tip".
Wanted to sleep this AM but that did not work. My mind starting going about 4 am and didn't stop. We are doing a menu tasting for family and the Chamber peeps tonight so gonna leave the house soon. Will post some pics tomorrow and the menu as it is my last day off before all the fun begins.

For tonight, 6 racks of ribs, 15 lbs. or brisket, 15+ pounds of pork butt, buttermilk fried chicken, wings (oh the wings), burgers, all beef hot dogs, kicked up grilled cheese, street tacos, salads, mac and cheese, cole slaw, potato salad, fries, sweet potato fries, onion rings. All meat is smoked and all the sides are home made except for the sweet potato fries. Hope everybody brings their appetites. Bon apetit.
 I just gained 10 pounds reading that. Sounds pretty damn good.

I came from Ohio and when we moved out here many years ago we kept seeing these stands that had tacos. :noidea: We never heard of a taco but that was a long time ago. I think the east part of the country is still a bit different than out here in good old comifornia. Buck, do you guys have any real mexican restaurants back in that area? I hear they are still kind of rare.

Hell no! We don't have any Mexican restaurants out here! The close we ever come is Taco Bell! If you can find a mom and pop Mexican restaurant, it's not good! At least to me! It seems like they have 7 ingredients that they combine in different ways! I'm not a fan! I think Mexican food sucks balls. And makes my ass hurt in the morning!

Are you sure that is the only thing that makes your ass hurt?:P You are right about mexican food using a lot of the same ingredients, but out here we have arguably the best mexican food in the country.

no arguments :prof: considering we boarder mexico and so many mexican immigrants have been here for so long we are bound have them bring their traditions. My wifes grandmother came here as a child and she cooked some of the best food i ever had.... dont care where it came from it was good stuff.

Just got back from the mountain, and yes, it's true, So Cal's can't drive in the rain. 7 accidents on the freeway between Santa Clarita and Chatsworth, about 10 miles.......
Anyways, the pre-opening taste test was a huge success, Bruce, Jason, Kris, John, Cindy and others really kicked butt and cooked up a whole bunch of awesome food. Tri-tip, brisket, fried chicken, different versions of wings, salads, coleslaw and more. We would finish one item and another would show up on the table. The two pretty waitresses D and D did an excellent job in keeping the food and beverages coming. I think the place is going to do very well.
Some photos of the goings on, due to operator error, a little blurry on some of them.

Place is easy to find, right on the main drag

I wish I could hit the like button a hundred times. Ended up serving 10-15 small course tastings. Am still tired. Thanks for the pics Ricky.:thumb::thumb:

True that! We midwesterners don't have the close proximity you do with Mexicans. So, it get's filtered as it rises north! I understand your point! I'm sure you have the best taste in the food as funnels up to the north, no?

That stuff really did look good WG! (Lip smacking)

 at that logic.... according to that San Diego has way better mexican food then Los Angeles.

As a northern guy, I have never tasted really good south of the boarder food. That being said, I will reserve my final thought on it until I get a good taste! I have been in S America, and my opinion was kinda the same. You guys must have some great recipes! @Travace: According to your logic, Mexican food turns into the fruit of Gods by the time it makes it up to me!

thats not my logic dude... that is yours

seriously how did you read that i say mexican food gets better as it goes north.... :picard: i will explain it for you.

sure we have lots of mexican food here and of course you have less mexican food places there. That in no way means that jsut because its farther from mexico that all mexican food that far is bad. There is horrible mexican food places just miles from the border that will literally make you shit the bed. yet i have been to mexican food place in UTAH, Calgary and Oaklahoma that had good food. sure it wasnt the best mexican food i ever had but it was better then some of the stuff here in SD.

there is so many variables buck... you could have jsut ordered the wrong thing or jsut some shitty food :noidea: If you were here in San Diego id take you to a place called Pacific Taco... its a fast food type joint and they have some bomb food. if you wanted a sit down restaurant id take you down to old town and jsut about any place you pick there is excellent.
